A new family-friendly pub, Weston Bull, is set to open its doors in Canberra’s west, promising a dining experience that features a steak “the size of a table.” This unique offering is set to attract families and food enthusiasts alike to a town centre that has few family-friendly venues.
Weston Bull has taken over the space previously occupied by The Meating Room, which closed its doors in February 2025. The pub is one of only two in the area, aiming to fill a gap in the local dining scene.
Revamping a Local Favorite
Head chef Bhishup Abichandani, who boasts over a decade of experience in Canberra’s culinary scene, including stints at Otis Dining Hall and Pialligo Estate, is leading the kitchen. He highlights the pub’s 1.5-kilogram tomahawk steak as the centerpiece of the menu.
“It’s like the size of the table, which is $200 but it’s shared between three to four people. We recommend it, don’t do it by yourself,” Mr. Abichandani said.
He further emphasized the importance of having a specialty, a lesson he learned from working with top chefs in the region. “Every restaurant, every cafe, whatever it is, even a takeaway joint should have one specialty,” he noted.
A Culinary Experience Beyond the Ordinary
While many may pride themselves on their home-cooked steaks, Mr. Abichandani believes it’s the sauce that will keep patrons returning. The sauce is made by reducing beef stock from 170 liters down to five, infused with herbs, vegetables, and a touch of brandy and butter.
“You keep the beef bones on the stove at low heat, make a beef stock and then the beef stock will reduce, reduce, reduce,” he explained.
In addition to the tomahawk steak, the pub offers a standard steak priced around $40, with a special $29 steak and drink deal available every Wednesday.
Commitment to Community
Mr. Abichandani has committed to a 10-year lease for the property, emphasizing his dedication to becoming a part of the local community. “We want to be a part of the community … we are here for the long run,” he said.
The transformation of the venue involved significant refurbishment. “We had to change all the furniture … the kitchen was a mess,” he said, noting the building’s age of nearly 30 years necessitated updates.
Future Prospects and Community Impact
The opening of Weston Bull represents more than just a new dining option; it signifies a revitalization of the local area. By offering a unique dining experience and a commitment to quality, the pub aims to attract both locals and visitors, potentially boosting the local economy.
As the hospitality industry continues to recover from the challenges of recent years, establishments like Weston Bull play a crucial role in fostering community spirit and providing employment opportunities.
With its grand opening, Weston Bull is poised to become a staple in Canberra’s west, offering a welcoming atmosphere for families and a memorable dining experience.
