When it comes to Australia’s wellness landscape, few names are as influential as KAILO. Known for the luxurious medispa inside The Calile Hotel and the supplement brand KAILO Nutrition, co-founded by Kristy Morris and her husband, entrepreneur Dr. Oz Dedehayir, KAILO has been a significant player in shaping modern wellbeing. Now, in an exciting new venture for 2026, they are introducing a fresh concept to the West End.
Enter Süreyya Kahve by KAILO Nutrition, a new café set to open within Function Well’s new flagship in West End. This innovative space blends Dr. Dedehayir’s Turkish heritage with Morris’s passion for health and wellness, aiming to create a café experience that Kristy Morris describes as “redefining the current state of café culture.”
A New Concept by KAILO Nutrition
The launch of Süreyya Kahve wasn’t initially on the agenda for 2026. However, when Darren Bain, founder of Function Well, presented the opportunity, it was one they couldn’t pass up. “KAILO as a brand has always aligned in values and maintained a strong relationship with Function Well, combining our passion for wellness, longevity, and community,” Morris explains. “With my passion and commitment to delivering exceptional service, combined with my background in hospitality, and Oz’s expertise in innovation and technology, taking this next step in our vision to expand the KAILO ecosystem felt like a natural choice.”
A Menu with a Wellness Lens
Named after Dr. Dedehayir’s late grandmother, Süreyya, the café holds deep personal significance. The menu features traditional Turkish recipes with a modern, wellness-focused twist: nutrient-dense salads, elevated sandwiches, and protein-rich smoothies powered by KAILO Nutrition’s award-winning supplements. Coffee, naturally, comes courtesy of Melbourne favorite ST. ALi. “Every single item on the menu will be scientifically-backed, containing only the best, premium ingredients to fuel our guests,” says Morris.
While Middle Eastern cuisine is renowned for its irresistible desserts like baklava and kunefe, these dishes are often laden with heavy creams and sugar. At Süreyya Kahve, refined sugars are replaced with healthier alternatives, protein-rich ingredients are prioritized, and dishes are topped off with a ganache made with KAILO Nutrition.
“For me, while there are many familiar items on the menu with a slight twist, my favorite is the Strawberry Gum Overnight Oats,” says Dr. Dedehayir. “For Kristy, she’s most excited about the creative side of the drinks menu. Her personal favorite is the Chai Choc Peanut Butter Smoothie.”
Designed as a hub for connection and nourishment, the space promises refined service and a menu grounded in science but served with heart. Importantly, you don’t need to be a member at Function Well to enjoy the café’s offerings.
Middle-Eastern-Inspired Interiors
With Muscolino Shaw leading the interior design and Lowry Group handling the fit-out, an A-list team is bringing the street-facing space to life. The design seamlessly complements Function Well’s aesthetic. “We’re embracing deep, rich tones to create a moody atmosphere while honoring Middle Eastern heritage with a modern twist,” says Kristy. “Maroon marble features and sculptural arches are complemented by subtle touches of gold.”
This new venture represents a convergence of heritage, hospitality, and wellness. West End locals have just gained a new go-to spot for healthy eats and vibrant community interaction.
